Spicy chicken with sautéed spinach and smashed seasoned potatoes
Chicken Breasts, Spinach, Baby Potatoes, Olive Oil, Butter, Lars Tetens Spicy Garlic, Lars Tetens Sabor
And here's Mike's recipe:
  • Preheat oven to 425F. Boil baby potatoes for about 25 min until soft enough to easily poke a fork through. Put potatoes on oiled baking sheet and smash each potato. Use olive oil to moisten potatoes and generously sprinkle Lars Tetens Sabor seasonings over each potato. Bake for 40 min at 425F. Set a timer for 20 minutes, that’s when you will add chicken breast to the oven. 
  • Place chicken in a baking dish, use olive oil to coat chicken.
  • Add Lars Tetens Spicy Garlic Seasonings and freshly ground pepper to coat the chicken breasts. (Mike’s secret for moist chicken… add a pat of butter to each breast.)
  • Place in 425F oven.
  • Check breast after 20 min. Internal temp should be at 160F but it will continue to cook so if your at 156-ish after 20 minutes you are good to take out the breasts.
  • Use the juices from the chicken to lightly sautée your spinach! Mike says he doesn’t cook spinach so much that it wilts to nothing. He leaves the spinach with a little crispness to it.
